- Return the chicken to the pan and bring to the simmer. place a lid on the pa n and continue to cook allowing the sauce to just simmer for some minutes until the meet is completely tender
- To finish remove the chicken, place into a plate or lid and keep in a warm place eg side if a oven or any source of heat. Skin the sauce of any further excess fat and adjust the consistency of the sauce if necessary
- Adjust the seasoning before adding the tomato… Place the chicken into the sauce and scatter some chopped parsley before serving
