Steps to make Filipino Pakbet:
  1. Cut pork into bite size pieces. Keep any bones. This will be cooked and included with the dish. It adds extra flavor. Wash pork and drain or dry with a paper towel.
  2. Heat a large pan on med heat. Saute pork for approximately 5 min. Season with salt and pepper and remove from pan. Set aside. (Fyi- oil not needed since it was washed.)
  3. Saute onions in same pan used for pork for 1 min, drizzle olive oil and add garlic until fragrant, about 30 sec. Add tomatoes and continue to saute for 2 more min. Add butternut squash and cook for 5 min.
  4. Add long beans and mix well. Cook for 3 min then add ginger. Cook 2 min.
  5. Add zucchini and bitter melon with 1 3/4 c water. Stir to combine. Continue to let cook as you prepare the next step.
  6. Meanwhile, cut up eggplant and add to pan. Cook for another 3-4 min.
  7. Mix dry broth seasoning with the remaining 1/4 c of water then mix with the vegetables.
  8. Add raw shrimp and cooked pork. Mix well. Lower heat to simmer and cover for 10-12 min. Enjoy!
