  1. Saute the onions in some heated oil in a large nonstick pan. When the onions start to soften, add the potatoes. Spread the potatoes in an even layer and cook, it needs to get tender and browned. This would take 15 or 20mins
  2. Mins into the potatoes cooking, add the green beans and the mashed garlic. Season with salt and pepper and sprinkle the crushed red pepper flakes
  3. After a few minutes, add the red capsicum slices and allow it to cook
  4. When the veggies are nicely cooked and the potatoes are brown but nice and tender, crack each egg gently over the potato-greenbean-capscium mix. I made a little hole in the mix and slowly dropped the eggs. Cover and cook on medium low until the egg yolks are cooked to your taste
  5. Once done, I garnished it with freshly chopped spring onions, coriander and some finely grated parmesan cheese…. yum!!!
