- Soak rajma in water for 8-10 hrs and pressure cook it.
- Remove water from it and mash it coarsly.
- In a pan heat oil.
- Add chopped onion and crushed garlic. Saute it.
- Add chopped tomato and capsicum. Saute till oil seperates.
- Add salt, red chilli powder, black pepper powder, sugar, chilli flakes, oregano and tomato sauce.
- Add boiled corn and coarsly mashed rajma.
- Mix well and cook for couple of minutes. Mixture should not be soggy.
- Transfer to a bowl and let it cool down at room temperature
- Take one tortilla, spread rajma stuffing over it.
- Spread grated cheese over it.
- Cover with other tortilla and press it slightly.
- Cook both sides with oil or butter on heated tawa.
