- when pan is hot add egg whites. the amount depends on how much you want. about 3-4 tblsp is good I say
- add diced green/red peppers

- As egg whites cook tilt pan to allow liquid to fall under the already cooked egg. Continue doing this until no more liquid is left on top. Easiest w/a rubber spatula
- Flip omelette in half and sprinkle remaining cheddar and peppers on top of omelette. turn off heat amd let sit for about a minute while cheese melts
