- Prepare 1/4 tomato, finely chopped
- Get 1/4 red onion, finely chopped
- Make ready To taste green chilli, optional
- Take Juice of ½ lime
- Prepare 2 tbsps avocado
- Take 4 stalks coriander, finely chopped

Steps to make Dressed or Stuffed Eggs in 3 ways:
- Boil eggs in water. Remove them and place them in cold water for it to cool and for the shell to separate from the inside.
- Slice the eggs in half, remove the egg yolks and place them in a bowl.
- For the cajun filling: put 3 eggs yolks in a bowl, add the cajun spice, mustard, mayonnaise, salt and pepper then mix them to make it smooth without lumps )
- I made my own cajun spice by mixing garlic, cumin, paprika, oregano and black pepper powders together.
- Classic filling: Add 3 yolks into a separate bowl, add mustard, mayonnaise, salt and pepper then mix to make it smooth free from any lumps.
- Guacamole filling: Put 4 yolks in a bowl and add avocado, coriander, tomatoes, onions, lemon juice, green chilli then mix them together. (It's basically salsa/kachumbari + yolks)
- Stuff two egg whites with the cajun filling. Stuff two egg whites with the classic filling and three egg whites with the guacamole filling.
- Garnish with paprika powder and coriander leaves.
- The remaining fillings can all be mixed together and spread on bread for a snack or you can spread them separately.
